*Oats Cauliflower tikki*
Ingredients
Cauliflower: 2 cups (finely chopped and blanched)
Quick-cooking oats: 1/2 cup
Oats flour: 1/2 cup
Onion: 1/2 cup (finely chopped)
French beans: 1/2 cup (finely chopped and boiled)
Carrots: 1/2 cup (finely chopped and boiled)
Green chili paste: 1 tsp
Ginger paste: 1/2 tsp
Coriander leaves: 2 tbsp (finely chopped)
Mint leaves: 2 tbsp (finely chopped)
Garam masala: 1 1/2 tsp
Amchur (dried mango powder): 1 1/2 tsp
Chaat masala: 1/2 tsp
Oil: 3 1/4 tsp total
Salt: to taste
InstructionsSauté the onion: Heat 1 teaspoon of oil in a non-stick pan, add the chopped onions, and sauté for 2 minutes on a medium flame
Mix and mash: Transfer the cooked onions to a large bowl. Add the blanched cauliflower, boiled french beans, and boiled carrots. Mash the mixture lightly using a potato masher
Add remaining ingredients: Add the quick-cooking oats, oats flour, green chili paste, ginger paste, coriander, mint, garam masala, amchur, chaat masala, and salt. Mix well.
Rest the dough: Keep the mixture aside for 10 minutes so the oats absorb the flavors and bind the ingredients together
Shape the tikkis: Divide the mixture into 16 equal portions. Shape each portion into a flat, round tikki
Cook: Heat a non-stick tawa (griddle) and grease it with a little oil. Cook each tikki on a slow flame using a few drops of oil until it turns crisp and golden brown on both sides
Serve: Serve hot with a fresh green mint chutney
