Veg Vermicelli🍛

Ingredients

•bowl of vermicelli
•2 tsp onion
•mix chopped veggies 2-3 tbsp (Carrot ,tomato,beans ,
cauliflower,cabbage )
•1/2 green chilli
•1/4 tsp cumin seeds,green cardamom
•1/2 cinnamon stick
•leaves of coriander to garnish
•few drops of oil

Method

•Dry roast half bowl vermicelli till lightly golden set aside in a plate .
•Heat drops of oil in pan, add 1/4 tsp cumin cloves, 1/4 tsp green cardamom ,1/2 cinnamon stick n fry for 1-2 minutes.
• Add 2 tsp onion n 1/2 chilli fry until the onion turns slightly golden.
• Add 2-3 tbsp carrots cauliflower peas n bean coriander n mints fry for 2-3 minutes cover .
•cook until the veggie get cook add pinch of red chilly powder n saute for a minute pour water n salt stir n check salt bring a water to a rapid boil .
•Add vermicelli cook till water gets absorbed .
•Serve hot .
•Granish with green coriander

RAMAYANA’S VEG OATS

INGREDIENTS
½ cup rolled oats
▢2-3 Drops of oil
▢½ tsp jeera / cumin
▢few curry leaves
▢1 inch ginger (finely chopped)
▢1 chilli (slit)
▢½ onion (finely chopped)
▢½ carrot (finely chopped)
▢3 beans (finely chopped)
▢¼ capsicum (finely chopped)
▢2 tbsp peas / matar
▢½ tsp turmeric
▢¾ tsp salt
▢1 cup water
▢2 tbsp coriander (finely chopped)
▢1 tbsp lemon juice

INSTRUCTIONS

firstly, in a large kadai heat oil jeera, few curry leaves .
saute until golden brown.
now add ginger, chilli and onion. saute well.
furthermore add carrot, beans, capsicum, turmeric and salt.
add water, cover and simmer for 5 minutes.
now add 1 cup water and get it to a boil. if using instant oats, just add ¼ cup water.
once the water comes to a boil, add in roasted oats and mix well.
mix until the oats absorb all the water.
now cover and simmer for 5 minutes or until oats gets cooked well.
furthermore add ¼ tsp salt, 2 tbsp coriander, and lemon juice.
finally, enjoy vegetable oats

RAMAYANA’S VEGETABLE CLEAR SOUP

INGREDIENTS

▢3 cloves of garlic
▢ 1 inch finely chopped ginger
▢½ onion
▢½ cup finely chopped cabbage
▢ ½ finely chopped carrot
▢⅓ finely chopped capsicum (green bell pepper)
▢6-7 finely chopped french beans
Other Ingredients
▢4-5 drops oil –
▢1.5 cups water
▢1.pinch ground black pepper
▢salt as required

Instructions

Preparation
Finely chop a bit of garlic and ginger. Measure and set them aside.
Also finely chop the vegetables you are going to add in the soup.

In a pan or pot, take oil. Add finely chopped garlic and finely chopped ginger.
Sauté for a few seconds until the raw aroma of both ginger and garlic goes away. Do not brown them.

Then add the chopped spring onions or onions. Sauté until translucent stirring often. You can also add ½ teaspoon chopped celery at this step.

Now add finely chopped cabbage, carrots, capsicum and french beans.
Sauté for 1 to 2 minutes on low to medium heat.

Simmering Soup
Add 3 cups water. Season with ground black pepper powder, salt
Mix well. Cover the pan and simmer the clear soup on a low to medium heat until the veggies are almost tender.

Some crunch in the veggies taste good. So do not cook the veggies completely.

Garnish with some chopped spring onion greens and serve clear vegetable soup hot.

quinoa matar pulao

Quinoa Matar Pulao

▢ 3-4 drops of oil
▢ 1 bay leaf
▢ 1/2 teaspoon cumin seeds
▢ 1 whole green cardamom
▢ 1 whole cloves
▢ 1 medium red onion sliced
▢ 1 green chili chopped
▢ 1 cup quinoa 185 grams, cooked nd
▢ 1/2 cup green peas
▢ 2 tablespoons chopped cilantro
▢ 1.25 cups water
▢ 1/2 teaspoon salt or to taste

INSTRUCTIONS

Rinse the quinoa under running water using a strainer for 1-2 minutes and keep it dipped for half an hour in the water

Also, add the frozen green peas to a bowl of warm water while you do the rest of the steps.

Switch on the burner and in apressure cooker, add the oil and then add the whole spices- bay leaf, cumin seeds, green cardamom, black cardamom and cloves. Let them sizzle for few seconds.

Then add the sliced onion and green chili and cook for 2 to 3 minutes until the onion is softened.

Drain the green peas and then add them to the pot along with cilantro. Also, add the quinoa and toss everything together.

Add water, salt and stir. Close the pressure cooker with it’s lid.

After closing the pressure cooker , let is whistle for 2 minutes (with the pressure valve in the sealing position). Let the pressure release naturally, which takes around 15 minutes.

Open the lid and using a fork fluff the quinoa.
