107. Ramayana’s Missi roti ?

Ingredients :
1 cup Wheat flour (Atta)
1/2 cup Gram flour (Besan)
1 Onion:-
3-4 Green chilli:-
1 tsp Salt
1/2 tsp Turmeric powder
1/2 tsp Red chilli powder
1/2 tsp Cumin powder
2 teaspoon desi Ghee (for roasting)
as needed Water (for kneading dough)

Method :
°Take a bowl. Add 2 cup of wheat flour (atta) and 1 cup of gram flour (besan) to it.
°Add 1/2 tsp turmeric powder, 1tsp red chilli powder, 1tsp cumin powder, 1 tsp salt and 2 spoon oil or ghee in it and mix everything together.
°Then add 1 Finely chopped onion and some green chilies and knead the dough. Allow it to rest for 10 min.
°Take a pan or Tawaa. Heat it up. Take a dough ball on rolling board and dust some dry wheat flour on both sides of the dough ball. Roll it to a circle.
°Place the roti on hot tawaa. Roast it for some time then spread some ghee on one side of the roti and roast it for 1 min.
°Missi roti is ready. Serve it hot.

106. Ramayana’s special Tomato sauce

Ingredients
°tomatoes
°chopped ginger
°garlic
°half dried red chilli
°vinegar
°jaggery
°salt to taste

method
1. Rinse the tomatoes in water and then drain them. Use fresh ripe tomatoes.
2. Chop them roughly. Remove the skin or parts which are blemished or spotted.
3. Now in a large casserole or pot or a 4 to 5 litre pressure cooker, add the chopped tomatoes.
4. Add the chopped ginger, garlic and halved dry red chilies Nd salt to taste.
5. Pour vinegar.
6. Add jaggery.
7. kept the cooker on low flame. Stirred very well and below is the result after 9 mins. You don’t need to add any water.
8. Simmer and cook the tomatoes, till they are softened. The tomatoes have got softened after a total of 27 mins. The timing will vary and depends on the pan you use, the intensity of the flame etc.
9. When the mixture is slightly hot or warm, then using an immersion blender, make a nice smooth puree of everything. You can also make the puree in an electric blender. Make sure to puree very well.

105. Ramayana’s Low Fat Dahi Chicken

Ingredients
°250gm boneless chicken (cut as you like it)
°1/2 cups yogurt
°1 tsp cumin / zeera powder
°1 tsp garlic paste
° 1/4 tsp turmeric/haldi
°1/4 tsp garam masala
°Few slit green chillies
°1 onions, chopped
°1 tomato, chopped
°Coriander leaves to garnish
°1 tsp oil
°red chilly and salt according to taste

Procedure
Take the yogurt and mix in the cumin powder, garlic paste, garam masala, haldi and red chilli powder. Mix with hands. Put chicken into this and add slit chillies. Keep aside for 30 minutes.

Now heat 1 tsp oil in pan and add onions. Cook till translucent and soft.

Add the tomatoes. Cook for a minute and add all the chicken and marinade.

Keep cooking till gravy reaches the consistency you like. Of you like it more dry, cook a little bit more till yogurt curdles around chicken.

Garnish with coriander leaves and enjoy.

104. Ramayana’s Special Rava Appe ?

Ingredients
▢ ½ tsp Vegetable Oil
▢½ tsp Mustard Seeds
▢½ tsp Cumin Seeds
▢1 tsp Chana Dal
▢¼ tsp Hing
▢10-12 Curry Leaves
▢1 tsp Ginger (finely chopped)
▢1 tsp Green Chilli (finely chopped)
▢1 Dry Red Chilli (broken)
▢1-2 Cashew Nuts
▢1 cup Rava
▢½ cup Curd
▢2 tbsp Carrots (shredded)
▢Salt (to taste)
▢1 tsp Eno Fruit Salt

Instructions
Heat vegetable oil in a pan.
Once the oil is hot, add mustard seeds, cumin seeds and chana dal and fry for a few seconds.Add hing, curry leaves, ginger, green chilli, dry red chilli and cashew nuts and fry until cashew nuts turns slightly brown.Add rava and roast it on low flame until slightly browned.
Remove the rava in a bowl and let it cool completely.
Add curd and carrot in the cooled rava and mix well.
Add some water to make idli like batter.Cover the batter and keep aside for 15 minutes.Check the consistency of the batter once again.Add more water if required. Also add Eno Fruit Salt and give it a mix.
Heat an appe pan and add some oil in the cavities.
Pour the batter in the cavities.Cover the pan and let the appe cook until nicely browned from the bottom.
Flip and cook from other side as well.Remove from pan and serve hot.
