183. Ramayana’s Roti noodles

Ingredients
°2 chapatis
° ½ chopped onion
° ½ chopped tomato
° ¼ sp Cumin seeds
° ½ sp schezwan sauce
° ½ chopped coriander leaves
° pinch of black pepper
° salt to taste

Instructions

1. Take 1 chapati, roll the chapati fully.
Now cut the chapati into slices, so that it looks like noodles. Repeat the same for 2nd chapati.

2. Now in a pan, add 2-3 drops of oil. Roast the cumin seeds.

3. Add chopped onions into it.. Saute it until the onions are golden brown..

4. Add chopped tomato, haldi, salt, black pepper, coriander leaves.. Saute all the mixture thoroughly.

5. Now add ½ spoon schezwan sauce and roti noodles.. Stir it completely..

6. Your tasty roti noodles are ready..

182. Ramayana’s Uttapam

Ingredients
•▢½ cup idli rice or parboiled rice
•▢1 cups water for soaking rice
•▢½ cup whole husked urad dal
▢1 cup water for soaking urad dal
▢¼ teaspoon fenugreek seeds (methi seeds)
▢ water for grinding urad dal nd rice add as required
▢ salt (edible and food grade)

For Onion Toppings
▢½ cup chopped onions
▢⅓ cup chopped coriander leaves
▢3-4 curry leaves – chopped
▢1 green chilli ( chopped)

Instructions
a bowl take the whole urad dal and fenugreek seeds.
Rinse both the urad dal and methi seeds for a couple of times.

Then soak them in 1 cup water for 4 to 5 hours.

In another bowl take the parboiled rice or idli rice. Rinse the parboiled rice or idli rice for a couple of times and keep aside.
Add 2 cups of water. Mix well and soak everything for 4 to 5 hours.

Blending And Fermenting Batter

Strain the urad dal and reserve the water. Keep this water for blending/grinding the dal.

Add the strained urad dal in the grinder.

First add ¼ cup of the reserved water and blend for some seconds. Then add the rest of ¼ cup water and continue to blend till the batter is light, smooth and fluffy.

Pour the urad dal batter in a large bowl or pan. The batter should be fluffy, smooth and light.
To the same jar, add half of the rice.
Then add ¼ to ½ cup water and blend till smooth. A fine grainy consistency of rice is also fine in the batter.

Pour the rice batter in the bowl containing the urad dal batter.

Add salt as per taste.
Mix both the batters very well with your hands or a spoon or spatula.
Cover and allow the batter to ferment overnight .

in the morning, Just lightly stir the batter. Check the consistency. If the batter looks too thick, you can add water Mix well.

Making Uttapam
Heat up a tawa , brush some oil on the tawa. Pour the batter with a ladle

Gently spread the batter to a thick pancake.

Add some chopped onions and green chilly while you spread the batter

Press the onion slightly so that they stick to the batter.

The uttapam should be thick.
Cook them on a medium flame. Drizzle some oil on the top and sides.

Cook till the base is golden.
Then flip and cook the other side.
. Prepare the uthappam this way with the rest of the batter.

181. Ramayana’s Kiwi Milkshake

• 1 Kiwi (chopped)
• 1 glass milk
• honey – only tip of the spoon
•2 almonds

Directions
In blender, place ingredients. Cover, blend on high speed about 30 seconds or until smooth.

Pour into glass. Serve .

180. Ramayana’s Apple & kiwi smoothie

•1 small apple, peeled, cut into chunks
•1 kiwifruit, peeled, cut into chunks
•1½ cup yogurt
• 2 almonds (chopped)

Steps
In blender, place ingredients. Cover; blend on high speed about 30 seconds or until smooth.
Pour into glass . Serve immediately.

179. Ramayana’s Papaya Smoothie

•1 cup milk
•1/4 cup Greek yogurt
•½ ripe banana, peeled and sliced.
•½ bowl ripe papaya, peeled, seeded and chopped
•1 cup ice cubes

Directions

Combine the milk, yogurt, banana, papaya and ice cubes in a blender and blend until smooth. Pour into a large glass.
